Organic Calypso Tea is the after-dinner pot in our house — a fragrant herbal medley of lemon balm, peppermint, ginger, rosehips, orange peel, rose petals, jasmine flowers and cinnamon chips, every ingredient organic.
It drinks like a stroll through a garden at dusk. Peppermint and lemon balm set a fresh, green tone; rosehips and orange peel thread through a fruity tang; jasmine and rose add their perfume, and ginger with cinnamon warms the finish. Complex enough to hold your interest, gentle enough to end the evening on — this is the pot that comes out when dessert is done but nobody wants to leave the table.
Serving it
- A teaspoon per cup, three to four minutes, water fresh off the boil
- Lovely unadorned; honey rounds out the citrus notes
