Out of Africa Organic Rooibos Chai starts in one very specific place: the Cederberg Mountains of South Africa’s Western Cape, the only corner of earth where rooibos grows. Seven Seas Tea takes that red bush and gives it the full masala treatment.
Rooibos makes a wonderful chai base — smooth, slightly sweet and nutty, with none of black tea’s sharper edges — and here it carries ginger, cardamom, cinnamon, liquorice root, cloves, fennel, pepper, star anise, coriander seed and bay leaf. Because rooibos is naturally caffeine free and low in tannins, the cup stays mellow however long you brew it, and the clock never dictates when you can have one.
How we brew it
- Quick cup: a teaspoon per cup, three to four minutes in just-boiled water
- Stovetop: simmer a teaspoon per cup in equal parts water and milk for about five minutes
- Dairy, soy or nut milk all take to it — sweeten with honey
- Lovely black, too, if milk isn’t your thing
