Our French gourmet range

Our relationship with the celebrated French maison Comtesse du Barry began over 15 years ago. Today our French and Swiss team of gastronomes curates a collection that spans foie gras, terrines, rillettes, confit duck and cassoulet prepared by chefs in South West France, alongside premium truffle products, organic handcrafted teas, gourmet wine crackers, artisanal grissini, raw honey, flavour pearls, matcha, granola, hot sauces and condiments. Many are made with care in small batches right here in Australia.

Our story

Hubert Gourmet was founded over 20 years ago by Hubert, the passionate gastronome who gave the business its name and built it on a simple belief: Australians shouldn’t have to travel to France to enjoy exceptional gourmet food. Today, Hubert Gourmet is proudly owned and led by Philippe, who continues that vision with the support of our French and Swiss team of gastronomes. Every product is carefully tasted, evaluated and selected before earning its place in our collection.

We keep our collection small — around 150 carefully selected products — because every tin, jar and pouch is something we’d proudly serve at our own table. Nothing is added simply because a supplier offers it; every product has earned its place by impressing our team, and we believe our customers will love it just as much.

The producers we champion

Our longest relationship — more than 15 years now — is with Comtesse du Barry, founded in 1908 in Gimont, a village in Gascony, South-West France, when Joseph and Gabrielle Dubarry set out to make “the best foie gras in the whole world”. More than a century later, the maison’s foie gras, terrines and rillettes remain the heart of our French range.

From Victoria’s Mornington Peninsula, Peninsula Larder makes the award-winning flavour pearls that chefs and home cooks garnish everything with. From Canada, we are the importer and exclusive Australian distributor of Cannanda CB2. And from closer to home we champion Western Australian and Australian artisans: Seven Seas Tea and Margaret River Truffle Farm in the Margaret River region, Margaret River Crackers, Vasse Valley hemp foods, Hunnie raw WA honey, Simara Blends teas, QQ La Praline chocolates, Sophie Jade low-sugar treats, Nosh granola — and Melbourne’s boldest condiment maker, Keating & Co.

Our foie gras, and how it’s made

The foie gras we import is prepared by Comtesse du Barry’s chefs in South-West France, the historic heartland of the craft, from farm-raised ducks and geese of the region. The bloc recipe dates from 1954 and has never changed: whole foies gras blended and cooked without additives, for a fine presentation and a smooth cut.

We’re sometimes asked how foie gras is produced, and we’d rather answer plainly than gloss over it. Foie gras is made by fattening ducks or geese — a practice with centuries-deep roots in South-West French farming, and one governed today by French and EU regulation. We choose Comtesse du Barry because of that heritage: a century-old maison sourcing from traditional farms in its own region, cooking to recipes that predate industrial shortcuts.
