All the long, patient work has already been done by chefs in South-West France. Your job takes minutes: crisp the skin in a hot pan or oven, then serve. What you get is the great French contrast — meat so tender it collapses at the touch of a fork, under skin that crackles. This is duck confit as the South-West has always made it.
