The Firebird relish — Carolina Reaper, Trinidad Scorpion and birdseye chilli, softened by sweet potato and red onion — folded through a plant-based mayonnaise. The mayo tames the delivery, not the heat: this is the top of the Keating & Co mayo ladder and it is genuinely hot.
