Glossy and near-black, they sit on a plate like beads of caviar, then release a sharp-sweet rush of balsamic when they pop. Because the vinegar stays locked inside each pearl until you bite, salad leaves stay crisp and nothing turns soggy — a dressing and a garnish in one spoonful.
