The flavour is yuzu at its zingiest — sharp and fragrant, landing somewhere between lemon, mandarin and grapefruit. Each pearl holds a little pocket of liquid that pops cleanly, so you get bright citrus exactly where you place it. And because the pearls keep their shape on hot, cold and even frozen dishes, they’re far more forgiving than a squeeze of juice.
