A tin of Traditional Duck Rillettes 70g has rescued more of our picnics than we can count — hand-pulled duck rillettes from Comtesse du Barry, sized for a starter for two or one very good sandwich.
These are rillettes done properly: duck slow-cooked in fat at what the French call a grandmother’s pace — hours of it — with carrots, leeks, celery and garlic, and a whisper of nutmeg, clove, thyme and bay. The meat is then pulled by hand rather than machine-shredded, giving a spread that’s tender and gently textured without ever feeling heavy or greasy.
