Simara Blends African Rooibos takes South Africa’s famous red bush and grinds it fine for the milk jug — wild-harvested rooibos and coconut sugar, and that’s the entire label.
Rooibos grows in one place on the planet, the Cederberg country of the Western Cape, where it’s traditionally fermented to develop its russet colour and warm aroma. In the cup it’s naturally sweet in a honeyed way, softly nutty and earthy, with so few tannins that bitterness simply isn’t possible. Steamed into milk it becomes a red-hued latte that tastes like it took far more effort than it did — and being caffeine free, it’s as welcome at 9pm as 9am.
Making it
- Add a heaped teaspoon (5g) to 150ml of milk — dairy or plant, your call
- Heat with a steam wand, saucepan or microwave
- Or make a paste with a little milk first, then stir through the rest
