Done to a turn, these Traditional Goose Rillettes 70g are tender and smooth without being too fatty. At Comtesse du Barry they are still hand flaked. These rillettes recall good home cooking.

Ingredients:
Goose meat from free range goose (boned goose thigh, breast of goose, goose skin), pork; cooking in goose fat with carrots, leeks, celery, garlic, salt, pepper, nutmeg, cloves, thyme, Laurel. Salt content: 1.35g per 100g.

Serving Suggestions:
To reveal the full flavour of your rillettes we recommend you stir them lightly before serving.
For the perfect sandwich half a farm bread baguette, spread with the goose rillettes add 2 or 3 slices of boiled egg and the same of tomato, red onion and gherkin.
Serve with Flavour Pearls (Balsamic, Lemon Black Pepper or Native Bush Tomato). Delicious on Margaret River Crackers.

Rillettes is a preservation method similar to confit where meat is seasoned then slow cooked submerged in fat and cooked at a grandmotherly pace for several hours (4 to 10 hours). The meat is shredded. Rillettes are most commonly made with pork, but also made with other meats such as goose, duck, chicken, rabbit and sometimes with fish… Rillettes are best served at room temperature spread thickly on toasted bread.
