A full bodied red wine, such as our Graves or our Médoc goes well with these rillettes.

Ingredients:

Duck terrine with peppercorn terrine: Pork (origin France), duck (origin France) 35%, chicken liver, egg, green pepper 1.2%, salt, pork gelatin, sugar. Salt: 1.68g per 100g.

Gascony Style pork terrine: Pork (origin France), pork liver (origin France), egg, carrot, salt, pork gelatin, parsley, sugar, pepper, garlic. Salt: 1.58 g per 100 g.

Guinea fowl terrine with apples and Calvados terrine: Guinea fowl 34%, pork, apples 12%, onions, Calvados 4% (sulfites), eggs, poultry liver, salt, manioc starch, pork gelatin, pepper, clove, nutmeg, cinnamon, sugar.

Traditional Duck rillettes: Lean and 96% duck skin (origin France), cooking in fat with carrots, leeks, celery, garlic, salt, pepper, nutmeg, cloves, thyme, bay leaf.  Salt content: 1.2g per 100g.

Duck with orange terrine: Meat and fat of pork (France) 32%, chicken liver, onions candied with duck fat, egg, orange liqueur (alcohol, Cognac, natural bitter orange flavor, food colouring : E150a), salt, orange zest 1.2%, wheat flour (gluten), tapioca, gelatin, pepper, ginger, nutmeg, clove, cinnamon.

Comtesse du Barry terrines can be served as a first course, in sandwiches, or for appetizers and snacks.
